Well I don't know what you're both so worried about him for, he is such a financial drain at the moment it's unreal!! But yes he is fine, he woke up from his lovely eight hours sleep fully refreshed and with not a care in the world :D. And no bruised ribs!! Even after lying awake half the night listening to his awful snoring I couldn't damage him - it would be like kicking the family labrador :rotfl:!

Really pleased to hear that. I have never done with condensed milk. Have done with cocounut milk but decided I preferred the regular semi skimmed stuff.

Ooh coconut milk sounds interesting. Expensive stuff though. I bet a bit of dessicated coconut added in during the cooking would be nice........
I love rice pudding and have read so many posts about it on here, that I too bought pudding rice, carnation milk, single cream, clotted cream, caster sugar and full fat milk yikes! Cost me about £7 all in (because I bought risotto rice first, then found pudding rice in another shop - not to mention all the other "creams"). Will need to make sure I make a massive batch to make it all worthwhile lol. Suspect I failed miserably in my DFW goal today, but hey we're all entitled to a treat every once in a while ;)

Ooh, go for it Newbeginnings! You're right, we DO all deserve a treat, and that pudding is the very definition of comfort food! I just followed the recipe on the side of the packet in the end (doubled up though) and added some carnation milk because I'd read on here that it made it even creamier. I LOVE the sound of clotted and single cream in it - please report back :D!!

As for batch size, I read on the Old Style board that it doesn't freeze well, so don't make more than you can eat in a few days (which is rather a lot anyway!). Actually, it is so simple to make that you could just do another lot anytime you want it - especially if you're using an economical slow cooker. I'm going to make some more now :D!

  • Morning

There's always tomorrow. If he goes off the spend budget you could always tell him he will need to sleep with one eye open!

Good to see the signature update. Mine's tomorrow, mini goals keep me going.

  • I just make basic rice pudding, I find the slow long cooking breaks it down so ultracreamy in anycase. I freeze it regularily and to me it is fine!

I am being tempted to make some rice pudding for DD. She is pregnant and she and I are the only ones who like rice pudding. I bet she will love it. mm..

Happy I have loved reading about your DH and his ability to cost you more. At least his is accidental.:D

I struggled for far too many years with DH managing to spend more than I was saving. He is very helpful with cleaning shopping and laundry etc. but I learnt early on not to let him go shopping for food on his own. He would come back with lots of really exciting things to eat, saying 'This is lovely we should have it more often'. What he could never grasp is that we don't buy those things because we can't afford them.

  • Right....that's the rice pudding on. So many different recipes online, but opted for the 200gm rice, 50gm sugar (can always add more later), 1ltr of milk and 25gms of butter. If it's any good, will then add the clotted cleam once it's ready. Huge pot of home made soup on too for lunch all week. Feel quite pleased with myself!

Well.....what can I say, other than Yum with a capital Y! The measurements above were just perfect and I added in a tablespoon of clotted cream right at the end and switched off the slow cooker. Probably enough for 4 people. It's absolutely gorgeous and I cant believe how easy it was to make (literally butter the inside, then add everything and wait!) and much nicer than any shop bought....even the fresh clotted cream one you get for about £2-3 in most supermarkets. I'm a convert!:j

Ah, that's worth knowing. Someone on the OS board said it turned mushy, I will give it a try.

The one I used was 100gm rice, 100gm sugar, 2 pts milk (ie 1.13 ltrs),25gm butter and a tin of carnation, plus a grating of nutmeg. So loads sweeter than yours and it just goes to show this is not an exact science! Very MSE whichever recipe, because apart from the clotted cream the ingredients are all things that most people have in the house :) And yes I agree, definitely much better than shop bought.

I think home made rice pudding is the perfect food for pregnant people and it will make her feel very special if you make it for her. Congratulations on becoming a grandma too. Is she due soon or do you have a long wait yet?

Ha, I can just imagine Mr Poohbear, so proud of himself because he'd discovered such lovely food that you'd never thought of buying! Luckily Mr Happy hates the thought of shopping on his own now he knows we're on a budget - he says he can't handle the responsibility! If he knew exactly WHY our budget is so tight I think he would faint :D!
