Veggie fajitas?

    Have ordered some courgettes and baby corn in my food shop. Will add those and some of the spice mix to some of the peppers and onions. Hopefully with cheese, soured cream and spicy salsa that will work.

    I don't eat things that look like face masks (guacamole and refried beans) - bleugh!! :o

  • I put tofu in mine or quorn pieces but I'm not a quorn fan. But I'd be happy with lots of veggies & other stuff!

    Oh I wasn't suggesting you cook it that way, I was just saying that I cook it like that. I don't mind meat being cooked with my veggies, but Im sure most other veggies would never do it! x

  • We use quorn pieces or breasts. They are just as nice as with chicken etc.

    As a long time veggie; any Mexican dish without beans is just wrong, could you at least bung some cooked pinto beans in with your fried veggies, to give the protein part of the meal?

    Not every veggie enjoys quorn! I would make a stir-fry, add kidney beans and sweetcorn, and some piri piri sauce for a kick. A touch of Chinese 5-spice is also good with veggies.

    I was veggie for a long time (but no more :o) and it's always thoughtful to have a protein replacement that isn't quorn rather than just the meal without the meat.
  • I know one of the veggies won't eat beans (never eats chilli etc) and another can't eat salad or anything with tomatoes in. On that basis I don't really want to be messing around with lots of exotic supplements that could very well become my leftovers for several days.

    I'll get some quorn and ask them if they want it when they arrive. If not it can go in the freezer.

    If you look at the tex-mex restaurants (TGI, etc.) their veggie fajitas are just the same veggies with no meat, and they taste fine (I am a meat eater), because the flavour is mainly in the cooking & spices anyway.

    Pinto beans and refried beas make a good accompaniment (in addition to the guacamole, soured cream, salsa, grated cheese).

    If I went to someone's house and they gave me that, I'd be happy.
