Veggie fajitas?

Having friends over over the weekend and we've agreed to have fajitas........

I usually do chicken and prawn, marinating the meat in the spices and stir frying the peppers and onions without, but a couple of my friends are veggies. What can I replace the meat/fish with for them? Is there anything that would work other than quorn?

  • I usually just do loads of veggies and cover them in spices before stirfrying - lots of peppers, onions, mushrooms and whatever else that's lying around looking vaguely stirfryable.
  • Add some protein in the form of some beans. We usually add kidney beans, but have also occasionally used aduki beans. A little bit of grated cheese, maybe some sour cream and guacamole. Mmmm...stomach rumbling now.

    Im veggie, I make myself ones with onions and peppers mainly. Sometimes I throw in some mange tout, sugarsnap peas etc, kinda stirfry veggies.

    Cooked the same way as you would cook meat, soften a little, sprinkle on the dried mix and fry away x
    Can't think of anything smart to put here...
  • Another veggie here! I quite like Quorn (the chicken-style pieces work well for fajitas) but lots of veggies don't. I do fajitas with loads of veg as someone said above (onions, peppers, mushrooms, babycorn, even carrots) or with red kidney beans (even better if you use half normal and half the ones that come in chilli sauce) and onions, a red pepper and/or carrot along with tinned chopped tomatoes. HTH!
  • Either what everyone else has said. Or I do a veggie chilli (onions, tinned toms, peppers, red kidney beans, garlic, chillis, sweetcorn and sometimes quorn mince) and cook it awhile so it's not so wet. Then dollop a spoonful on a fajita, add some cheese, sour cream and lettuce. Yum. But can get messy !

  • Thanks for the suggestions. It was agreed as a fairly simple thing to make - I don't really want to make the veggie alternative massively more complicated than the rest!

    Just do the exact same for them as for the meateaters, just without the meat :-)

    I make one pot, and pick out the chicken and put into DH's fajita, then divide the veggies between us. A few jalapenos and some homemade guacamole and Im happy :)

    (Hm guacamole - 2 ripe avacado's mashed up, half a diced red onion, a few diced baby tomatoes or one bigger tom, lots of salt and pepper and as much lime juice as you like. Mix together and leave in the fridge to marinate together for at least an hour x)
    Can't think of anything smart to put here...

    hi, my son is a veggi, I cook the veg sprinkle on the fajita mix, take some out for my son before I put our chicken in. I bake some quorn chicken nuggets in the oven, cut them in half and put them in my sons, he said they are very nice.

    That would leave them with stirfried peppers and onions plus salsa etc. I'd like them to have a bit more than that!

    As for cooking together and fishing out the meat - I'd never, ever do that.

    If you're all eating at the table, why not make a filling with just veggies and serve with bowls of refried beans (from a can, or can make from kidney beans...really yummy), guacamole, sour cream, cheese and salad so everyone can pick their own fillings. I think guacamole/beans will add a nice 'meatiness' to them.
