From Thursday Aldi have butternut squash as part of their 'Super Six' offers. Does anyone have any (polite
) ideas as to what I could do with a butternut squash?
I know that you can roast them - what sort of herbs would you add for flavour if roasting? Any other ideas?

We roast our butternut squash with mixed herbs, usually whith other veg for a Sunday roast.
We have also made butternut squash and sweet potato soup, mmmmmm.
Just the other day I made a chunky veg curry using butternut squash, onions, corgettes, califlour, and mushrooms, this I must say was really nice, even our DD12 & DS6 wolfed it back, and because they veg was chunky the didn't even realise the curry was meat free.

We love them curried as well. When we roast them we add spices as hot as you like.
We also mash them once they have been roasted and mix with mashed potato to top shephards pie or cottage pies. They make a great roasted pasta dish and also a chunky vegetable casserole.

Thank you JulieGeorgiana, it sounds like a nice, spicy, curried butternut squash soup made in the slow cooker will be an easy way to try my first butternut squash.

We mash it with sweet potato for an accompaniment to meals.
Cook it in soup with carrots and red pepper.
Add it diced up to dishes such as cottage pie to bulk up the meat section.0 -
I enjoy it as soups, mashed and risottos, I keep planning to roast it, but always end up doing other things with it!0
