    Put it on freecycle JackieO, someone would be thrilled to bits with it:)
    Mine came from a charity stall so they did well out of it too.

    Anyway, the 'baguette' I made from the rest of the dough for a pizza is amazing, just like ciabatta:T complete with the irregular holes and everything. We had a piece each for a bacon buttie this morning, my goodness I'm glad there isn't too much of it! I've made a lot of different breads but this is truly wonderful, I just hope I can replicate it:)

    Hope you're all enjoying your Good Friday off work?

    I'm working my way through a job lot of catering bread mix which I got cheap a while ago, but to be honest it's getting a bit boring now.

    I'm making the loaves in my BM, and just looking for suggestions as to how I can jazz them up a bit really? Anything that I can throw in to give them that extra "something" and prevent it being just another boring loaf...

    I have both while and wholemeal mixes, so open to suggestions of additions to either of them :D

    I just chuck a mix of seeds (sesame, pumkin and poppy usually) into a big bowl, add the bread mix and stir until they're well dispersed before adding it to the machine. Have a look at your BM manual - there will probably be a point where you can add stuff to go on top of your loaf ( I haven't been that brave yet!)

    Seeds are good! As are oats, which make a softer loaf, just add a bit more water. Garlic and herbs and dried onions all work well, and the dough can also then be used as a really tasty pizza base. You could also try adding some extra sugar and an egg, and making a sweet iced buns.

    Apologies, there weren't any replies on here when I started my loaf this morning, so I did my own thing - 100g or so of extra strong cheddar cheese and a good handful (about 1/3 pot) of mixed herbs. I also substituted 1/3 of the water for milk. The end result is a delicious, soft herb 'n' cheese bread which was beautiful with some thin fried steak on it for lunch. :T

    I'll give your idea's a go with the next batch though :)

    try adding some chopped sundried Tomatoes (adding some of the oil to the liquid) and some parmesan cheese or chopped basil leaves. cant really advise on quantities as I usually go 'by eye'. but i tend to use about half a jar of tomatoes and about a half a cup of parmesan or a full cup of cheddar for a 2lb loaf. you may think this is stingy.......feel free to use more!
  • For a fruit bread, add 1 tablespoon sugar and 4oz mixed dried fruit or 4oz chopped dried apricots. Both popular in our house.

    Have a dig around your store cupboard, nearly all herbs and spices are good (though not all at the same time!) I've used seeds too - yum!
