Overnight hotel stay with 7 course taster menu - Groupon

Bought this in October, and has to be booked by 31/12 for staying between 01/12 - 24/04 Tues-Sat.
Tried to book for Saturday 28/01 but have been told we can only stay on a Tuesday or Wednesday, as all their Groupon weekend allocation has been taken up.
We simply cannot go midweek, as both work full time, and we don't have any family locally who can look after our 2 year old overnight, during the week. My partner only gets 2 weekends off in 5, so restricted all ways.
However, what's annoying is that they do have rooms available the night we want to stay, but are saying that they're not available for the Groupon deal, as they can sell them regardless.
The receptionist stated we'd had since 21st October to book it, so we should have done it sooner. However, as per above, we have to confirm when family can stay overnight etc.
Seems a bit crazy to me - the receptionist said we have to appreciate that they're a small company but surely they have to appreciate that their potential customers cannot necessarily stay when it's only convenient for the restaurant/hotel.
Spoken to Groupon, who've offered a credit, but we don't really want a £150 credit!
Any ideas would be welcome, please.......

The point is that Groupon deals are heavily discounted with the intention of filling slots during off-peak times, on a first come-first served basis so I can understand why they don't want to book you in when they could be selling a slot at full price to someone else. I think it may well be a case of 'live and learn' when it comes to booking as soon as you get your voucher, but other than giving the voucher to someone who can use it, selling it on or accepting the refund I'm not sure there's much you can do.0

I'd just like to give an update on this.
Groupon have contacted me today.
They've spoken to Winteringham Fields, who confirmed what I'd reported, and as a result, Groupon , have agreed to give me a full refund, rather than a credit note!

Burt don't be too hard on the other company. A lot of people offering Groupon deals have discovered it to be a nightmare.
