Accor Novotel hotel - best unrestricted rate?!

Hello,
I am planning a holiday to Paris for next year and am in the midst of booking a hotel for stay. I usually choose Accor hotels and choose the advanced rate (no cancellations etc.) and the payment gets taken directly from my card when I book.
However, I seem to be able to only have the option of Best Unrestricted Rate rooms for my dates but I'm not sure how this works? It says unrestricted cancellation with no charge. It quotes £175 but will my card be charged when I confirm my booking now or will it be upon arrival at hotel? Will this mean the price will be different when I pay on the day?
Can anyone share their experiences?
Just a bit worried because I don't want to end up paying something extortionate!
thanks!

hotels normally offer flexible rates, which can be cancelled right until the day no charges, or advance purchase.
If you book this, then I would guess you would simply pay on departure at the agreed rate. (although you need to read the specifics). THat is normally the case however.0 -
book it through an agent as its likely to come up cheaper, especially if you go via a website like quidco and get 10% cashback
i'd check on expedia, hotels, octopus, etc0
