Tracking explanation please

I'm thinking they'd adjust one (or both) trackrod ends to get the relationship between the front wheels correct relative to each other (at say parallel +2) and then adjust both trackrod ends (by equal but opposite amounts so the relationship between the front wheels stays the same) to align the front relative to the back

That sounds more like it to end up with the steering wheel pointing the right way as well. If nothing at the back is adjustable, all they can do is align all four wheels to point forwards when the steering wheel is centred, rather than finish up slightly left or right.

Yep, the place I use has one of the flashy 4 wheels set ups (Hunter?)

They centre the steering wheel and clamp it in place, put sensors on all the wheels then (from memory) adjust the rear camber and then toe on all four.
