    Pickled Onions
    Peel pickling onions--this year they are HUGE--

    Put in a bowl of cold water and throw in 2/3 handsful of kitchen salt

    Put a plate on top of the onions to sink them

    Take the bowl and leave outside/in the shed/in the garage, anywhere but the kitchen (pong alert)

    Go to bed/work/shopping/beach/pub

    24 hours later, rinse the onions well to get rid if the salt

    Use whichever vinegar you prefer, distilled/malt/cider is nice but maybe a bit of an acquired taste, pour half of it into a pan. If you like a slightly sweeter flavour, then put in about 2 tablespoonsful of sugar to a pint of vinegar. I use demerara sugar with malt vinegar and granulated white with distilled vinegar. Add whatever spices you like at this point. Bring to the boil, and stir to dissolve the sugar. At this stage you are infusing the spices into the vinegar and it may be as well to banish it to the shed with the onions overnight!!!

    Mix the remainder of the vinegar in.

    Put your onions in jars and cover with the cold vinegar. Depends on how you like the spiciness if you leave in spices or not.

    They will be ready to eat in about 6 weeks. I can't keep up with them so I do a batch about every 4 weeks at this time of year

    I've been doing a bit of hunting round on the Internet - wondering about spare parts for kilner jars. So - I've been looking for the metal screw rings for modern-style kilner jars. I know one can buy spare inner parts for those two-part tops from Lakeland - but thats the only part of this two-part top one can get from Lakeland. I've only found one possible source so far - and those cost pretty much the same price as the whole jar/both parts of the top. To my mind - if the jars cost £2.50 each - then half the lid should cost somewhere in the region of 25p-50p each maximum.

    Anyone know of anywhere they are obtainable - at a reasonable price please?
  • strangely enough Ceridwen, I have some of the older, wide screw lid bits,still in the original packaging, and jars, but I can't find any of the old-style wider lids! Anyone, out there,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,?

    Hi!

    I plan to make some lemon curd this weekend, and have bought some Kilner jars... but not sure how to seal them. I know it involves hot water, but that's about all I can gather! Can anyone offer any tips? Does the whole jar need boiling? ;)

    i take the rubber seal off then put in a low oven seems to do the trick!

    I believe that there is a technique for re-sterilising the produce after the bottle has been filled by a sort of cooking in a water bath after it has been filled, but I don't know much more than that I'm afraid - miles too lazy to want to do something like that :)

    I picked up several of the 1L storage jars in Asda a while back planning to use them for dry food stuff for a bit and them for my homemade jams and jellys. I've just filled 2 with some water and found they leak, terribly. So they don't have a decent seal on them. Can I still use them for jams and preserves? Or if not how can make them seal better?

    You are supposed to replace seals every time you use them (as in bottling etc. not dry goods) and most old-fashioned hardware stores stock replacements, or you can try our old friends Lakeland: http://www.lakeland.co.uk/search/kilner-jar-seals/q03.r16.1
    However, I am suspicious that these are not real Kilner jars and are the "look-alikes" marketed for looks + limited dry goods use only. I would check with Asda, as if they are Kilner jars (or intended for use in bottling) they are not "fit for purpose". If they were only intended as basic storage and didn't have proper seals, was that clear?
    Lakeland also stock other kinds of preserving jars, with proper seals.

  • Just checked with Asda and they are for dry foods only. Poopies!!!! I will keep them for my baking stuff and invest in some 9p curry sauce for the jars instead. Apparantly they are great for pickles etc.
