I think the salt is the one that is needed to 'feed' the yeast, so this is a hard one to reduce. I'd try reducing the sugar gradually in case of disaster loavesNot sure what would happen if you left it out completely.

I think salt kills the yeast :eek: , I too thought that sugar fed it, though maybe that was when we used live yeast.Official DFW Nerd Club - Member no: 203.0

Just a small tip, if you need caster sugar, and only have granulated, wizz it up in food processor, or Magic Bullet,(or one of the stick blenders with a sharp blade) and it just makes it finer. I have tried it with demarera sugar as well. Just makes the granules finer for dissolving in your mix.0
