  • i never thought about making them myself. they're v. cheap to buy. I think the last pack i bought was less than £1 and there was about 50 in them. You'd have to deep-fry them to allow them to puff up (making sure you immerse them totally in the oil) for about 7-10 secs each so that they go completely opaque. As I don't have space for the entire disc to go in, I break them up into more manageable pieces. It's not OS to buy them like this but better than ordering them with your t/a at 50p each!

    you dont have to deep fry them, brush them with a little oil (although thats not necessary and pop them in the microwave, watch them though as they cook.
  • JIL - thanks for that. i just followed the instructions on the packet.. your way is much more healthier! mmh, making me want to make some now!! but don't have any mango chutney tho! (essential with poppodoms and finely diced red onion) yom!

    I think they'd work out more expensive to make than to buy.I get mine from the local oriental store & for 75p you get 20 per pack & they come in about 5 different flavors.I too also brush them with oil & either microwave them or do them in a hot skillet.

    These are them,pappads or poppadums they're the same thing in reality...

    Oh,you can also buy 'mini pappads' for around the same price,great if you don't want the big ones or bung some chutneys on them for a party snack.

  • here is a poppadom recipe for you ;)

    1lb (2.5 cups) red lentils or 4 cups urbad (lentil flour)
    4.5 tsp salt
    1 tbs baking powder
    1 cup tepid water
    1/4 cup ghee or concentrated butter
    2 tsp black peppercorns

    prep time 1 hr plus drying
    makes about 20

    if using lentils - grind them into a fine flour. sift the lentil flour, salt and baking powder into a bowl and gradually add the tepid water - to form a dough.

    warm the ghee until melted - knead dough at least 20 mins - adding just enough of the ghee to stop it sticking to bowl.
    crush peppercorns and add to dough - kneading in to evenly spread them

    break the dough into about 20 (golf ball sized) pieces. roll them out thinly until about 6" diam. stack them on top of each other (using wax paper or something to keep each one seperated). dry them in a preheated oven (approx 2 hrs - at 350 F)
    cool then store in airtight container.

    Making papads is so much hassle! It's one of tasks I hate of summer. We always do it in summer when it's a good sunny day. The whole clan gets involved; rolling kneading etc... We spread the whole garden with a huge table cloth (several sewn together just for this purpose) and dry them out in the sun. Usually there has to be a guard in case of bugs, birds cats etc... We usually do enough for about a year (about 600ish) because we only use those when we have company. We use the packets for regular everyday use.

    Oh, and I just have mine with a mint sauce dip (2 tbsp natural yoghurt, 1/2 tsp mint jelly, a chilli chopped fine, squirt of lemon juice).

    OH and also when you're rolling out, roll it out between two sheets of cough film or the stiff film they wrap flowers in. You don't want to introduce more flour into the recipe.
