Microwave Sponge Pudding
Here's a quick and easy sponge pudding that can be knocked up in a matter of minutes and zapped just as quickly in the microwave for those "must have now" comfort food moments
The following quantities are plenty for 4 people and I often halve this to make a smaller version for 2 and cook for a minute or so less
Ingredients (basic sponge)
4oz (100g) butter/marg
4oz (100g) sugar
2 eggs, beaten
4oz (100g) SR Flour
2-3 tbsp milk
Beat butter and sugar together, add beaten egg, fold in flour and add sufficient milk to dropping consistency. Pour into buttered microwave-able bowl, cover with cling film, leaving small gap for steam to escape, and zap for 3-4 minutes on HIGH (based on 800W) ... leave to stand for a couple of minutes after.
BE CAREFUL REMOVING CLING FILM AS STEAM WILL STILL BE PRESENT!!!
Variations:
Syrup sponge - place 2 tbsp golden syrup in bottom of bowl before adding pudding mix.
Ginger sponge - add a tsp of ground ginger with flour (nice combined with syrup!)
Chocolate sponge - replace 1oz/25g of flour with cocoa powder.
Spotted !!!!!! - add a handful of sultanas/raisins to pudding mix.
Upside down fruit sponge - add slices of pear, apple or pineapple etc (peeled and cored) in bottom of dish before adding pudding mix (pear is nice combined with ginger, cinnamon with apple, or even syrup too!!! YUM!!!)
Jam Sponge - place 2 tbsp jam of choice in bottom of bowl before adding pudding mix.
Lemon Sponge - add 2 tbsp lemon juice in place of milk and grated rind of half a lemon to pudding mix.
Taken from the index!:D (I made one the other day and it was lovely!)0 -
I've just finished eating syrup sponge made from that receipe. Only problem was the cling film ended up getting stuck to the top of the mixture and it didn't rise anywhere near as much as it did last time. But still yummyDebts: Mum £3923 0% APR0

Joey, What a fantastic easy recipe have always liked sponge pudding but could never get it right in the microwave before. I made your recipe tonight and it was a complete hit with the family and me. (made it with golden syrup on the bottom and covered in chocolate custard) wow! yummy. Pity you've shot my new years resolution down in flames now though! Lose a stone- more likely put two on at this rate:eek: Scary that the whole pudding and custard takes less than ten minutes to make but the resulting extra pounds will probably take ten months to get rid of  Thanks again for my favorite pud in minutes rather than hours. :TProud to have dealt with my debts. I made a syrup sponge last night, 'cos fancied something sweet after reading through the HM custard thread.
This is more than enough for 4 people
4 TBS suet
2-4 TBS sugar
8 TBS SR flour
1 egg and enough water to bind the above
Stick in a microwave bowl on top of couple spoons of syrup and micro for 5 mins.
This was really nice, can be made without the egg if you are eating straight away. There is nothing either good or bad but thinking makes it so.0 -
Hi all, just a quickie, my biys have asked for pudding after dinner and as they have been very good today I though I would treat them.
So we all fancy a treacle sponge, anybody got a recipe, I remeber my mum making one in the microwave, yum.
So if you have a reciped for microwave or traditional then please post it.
Many thanks

Hi Empty - this one works well:
4 ozs of marg/butter
4 ozs of caster sugar
4 ozs of self raising flour (seived)
2 eggs (beaten
2-3 tablespoons Syrup
Cream together fat and sugar until light in colour. Then slowly add eggs and then fold in the SR Flour carefully.
Place syrup in bottom of bowl and turn mixture in on top. Cook for 5 - 8 mins on high in microwave dependant upon power (750/650 etc). It is cooked if the middle is reasonably firm when pressed upon.
That has decided me on what we will be having for pud tonight as well;)"there are some persons in this World who, unable to give better proof of being wise, take a strange delight in showing what they think they have sagaciously read in mankind by uncharitable suspicions of them"(Herman Melville)0
