Credit card refunds

Why does it take so long for a credit (refund) to appear on my Capital One account. If I buy something, it shows in the "pending" items almost immediately, whereas a refund made this morning does not even show as "pending"?

I think it's because the merchant will have to authorise the sale but not the refund.
The authorisation acts as a 'warning' to your bank that a credit card transaction is on its way (unless it subsequently get's declined by the merhcant, but that's another story), and some may choose to use this authorisation to reserrve funds for the same and reduce your available balance (hence the 'pending; status.
The payment itself, and the refund, will follow the transaction route of merchant -> merchant acquirer -> card company -> card issuer -> customer statement which usually takes a day or two, as at least some of the steps are overnight processes.0 -
