I buy pure ginger puree from the asian shop - frozen in ice cube size blocks. its actually cheaper than buying and grating my own and no waste - win win

I also freeze my ginger whole and unpeeled. It is much easier to handle from frozen, and easy to cut, peel and grate straight from the freezer. Stops the waste, and cheaper to buy than a jar.

I would always buy fresh but some supermarkets sell it frozen cheaper than they sell it in jars.

I'm another fan of grating straight from the freezer. It's a lot easier than grating than fresh & you don't get the stringy bits, just try it & you won't ever use any other methods.0

One question though: do you use the skin as well when you grate it from frozen?
I imagine you just grate some off and put the rest back in the freezer? But the outer bits would still have peel on them...
Am I being thick?

We go through huge amounts of ginger and garlic. I usually peel and then stick it in a blender with some water and then freeze either in an icecube tray or sometimes I do blobs on a baking tray.
And like PipneyJane I keep the peelings in a separate bag for tea. I use 2 peelings of ginger, 2 cardamom pods, 2 bay leaves and a small stick of cinnamon and boil it it with some water for about 5/6 minutes. Just before you turn the gas off add a pinch of salt and then pour into cup using a sieve or just be careful not to get any of the stuff in the cup. Dunk a teabag (i use the value stuff for this) for a couple of second and then add sugar per your taste. Awesome!You'll have to speak up; I'm wearing a towel0 -
Morrisons do chopped ginger (looks like puree though) for £1, they also do garlic and chilli too which is handy.0
