Anybody use Outlook (2003) with Google Mail?

Been using this for a while and just realised that deleting mail in Outlook doesn't delete in Google Mail (specifically "AllMail").
There are probably lots of questions here but I guess if anybody knows a good Google Mail+Outlook FAQ could you point me to it please?
I'm using IMAP. I've worked out that to delete a Gmail email from outlook I have to move the message from Allmail to Bin folder (don't know why its not called Trash).
I think I understand about gmails labels (rather than folders) but does anybody know how the "Inbox" label is generated? e.g. is it, simply, that all incoming mail gets an "Inbox" label?
