How do you sell to overseas bidders ?

usually I just sell in the UK , but sometimes I want to sell overseas too , but its complicated .
I know that I have to use the avanced options , but how do I do the postage ?
I mean it only seems to allow one overseas postage option , and obviously it varies , mainly Europe and Rest of the World , one would be a lot more than the other (?)
what do you do ?
is it possible to leave the overseas postage unspecified and ask for overseas bidders to ask before bidding ?
whats the simplest way of doing it ?
