Huge amounts of potatoes, brocolli and carrots....what can i make?

Brocolli, cauliflower and cheese pasta is good, you can add leeks/onions/cooking bacon for alternatives as well as different types of pasta. Vegetable bake, vegetable lasagne, Brocolli and potato mash is yummy too, add some cheese and it's all good. cheesy veg bake is good too and freezes well in portions ready for just being taken out and added as a side dish. Portions of cooked brocolli frozen would be good as well to have in the freezer for quick meals. I also make potato, carrot, brocolli, well whatever veg I have leftover really, mix it all up and and cheese, portion up (I can't get them to retain the original shape they always go mash like but anyway fry it up from the freezer and it is delicious next to gammon steaks or adding bacon for an alternative breakfast. I wish I had a 1p haul on that I'm jealous!
