Huge amounts of potatoes, brocolli and carrots....what can i make?

Hiya all, after a amazing yellow sticker shopping trip at Mr T i am now the proud owner of 7.5kg potatoes, 1.5 kg carrots and a ridiculous amount of brocolli. I have blanced loads last week (20+ portions for the 4 of us) after another 1p haul so now i am after some suggestions of things i could make.

I have made some spiced carrot and lentil soup for lunches and a pot and carrot curry for tonights tea. I am not too worried about being able to use the pots up but it is the brocolli which is really stumping me....OH is a bit of a pain and doesn't really eat veggie tho i've told him we ARE having veggie curry tonight....so all ideas greatly appreciated.xx

ETA to say I also have a bag of soup mix (carrot, onion, swede and pot with parsley) and sprouts. I have a pretty good store cupboard and am a confident cook.

  • broccoli and stilton soup is a nice one, or how about making cauliflower cheese, but substituting the cauli for broccoli?
  • I am not a stilton fan and don't have any in-would it be ok with vintage cheddar instead? I hadn't thought of brocolli cheese-will go great with our roast on sunday. Thank you.xx

    slice potatoes thinly,place in shallow dish,cover with chicken stock and bake in oven for 50 mins. Par boil the broccolli and cauli,cover with cheese sauce in an oven proof dish and cook for 30 mins in oven, Serve with boiled sliced hot ham.

    Stirfried broccoli with sweet chilli sauce and sesame seeds is nice to have with noodles. And broccoli and pre blanched carrot sticks in tempura batter are good for dipping in sauces.

    I have loads of broccoli left over from the allotment this year. I've frozen a lot and will use it for pasta dishes and bakes. Jamie Oliver does a nice Broccoli and cauli cannelloni dish.. that would use up loads. goggle it.

    i had this problem on the weekend lol

    i made pies (or you could do pasties) mincebeef onion potato and carrot ... served with mash and broccoli :)

    yup i do this and it's delicious. You could also do a broccoli quiche/omelette: to diced blanched broccoli & 1/2 fried diced onion add a handful of grated cheese, pepper and 2 eggs (or enough to bind) and fry. If it's going to be a quiche mix the egg with milk. Or you could also add sliced potato to make a spanish omellete.
    Pasta and broccoli bake?
    Broccoli stir fry with seasame seeds, soy sauce and chilli.

    Broccoli and bacon pasta bake is delicious and quick to make. Just cook a fairly large head of broccoli, grill/fry bacon strips (as much as you want), make your own cheese sauce and add your choice of cooked pasta - I use 500g of penne or rigatoni. Once it's all mixed up, add some grated cheese and pop under the grill. It really is yummy!

    Rose Elliott gives a great Carrot & Hazelnut Roast recipe in her Cheap & Easy Cookbook. You might be able to find it on the web somewhere via Google. I've made it using other nuts and it works just fine.

    ETA: you might also want to try carrot cake. That will use up a few and is both healthy and delicious.
