Office 2007 SP3 Comapatibilty pack seems to have converted my Excel 2003 into 2007 version, is that what I should expect? Thanks.

No, it's not what you expect - nor what has actually happened!
The compatibility pack (FileFormatConverters.exe) gives you the ability to process Office 2007 and Office 2010 files (.DOCX, .XLSX, etc) on Office 2003, Office 2002=Office XP, and Office 2000...0 -

It depends what default file-type you set in the usual Tools -> Options, perhaps?0
