We've agreed to do the boxing day dinner this year. There will be approx 10 people. we've done boxing day in the past and its been a buffet of leftovers. We would like to do a buffet again so we can all just pick at food as we like to play board games. But we aren't doing Xmas day so technically wont have any leftovers! (though H still wants to do a turkey and gammon!). So does anyone have ideas?

Lots of different cheeses with biscuits, pickles, chutneys etc. Onion bhajis, vegetable samosas, dips, crudites.
This is the sort of thing we have on boxing day, and just pick when we feel like it!!!!0 -
I will be doing left over meats served cold with Hot New Potatoes, Mashed Potato, Coleslaw, Savoury Rice Salad, Tuna Pasta, Florida Salad, assorted Salads such as Nicoise and Greek, variety of breads (some hot) selection of pickles and chutneys. For dessert - Triffle, Strawberry Gateau, Lemon Cheesecake with Fresh Cream and finally finishing of with a Cheese Board.
Hope this helps you for some ideas.0 -
Coronation chicken/turkey is my family's favourite.0

There's usually between 20 & 24 of us on Boxing Day and we have cold meats (usually turkey, beef & ham), hot sausages, bubble & squeak (there would be riots if we didn't have this!), jacket potatoes, pickles, coleslaw, sweetcorn (for my adult son!), baked beans (for my adult niece!) and rolls and butter.
Followed by apple crumble with custard or Cornish vanilla ice cream or cream, or Christmas pudding or mince pies.
In the evening I just lay out the leftover cold meats, with salad, cheeses, pickles and rolls & butter then we all help ourselves and grab a seat where we can!
I usually make a trifle and a chocolate cake and there's always the Christmas cake!! Fancy ice cream or lollies for the children and anyone else who wants them.0 -
if we need 'leftovers' we pop to the supermarket and get the lovely deli man to thick slice off some beef/ham/turkey
(if truth be known...... I do a cheating roast beef dinner that way too - shhhhhhh)"A wise mum remembers her friends at all times, a foolish mum, only when she has need of them..."0 -
Lots of greenery/salady stuff/dips to counteract the overindulgence of the day before.
And chocolate mini-rolls - an absolute essential. All shall be well, and all shall be well, and all manner of things shall be well.
Pedant alert - it's could have, not could of.0 -
Hi I do one too;
Last year I made a big pan of chicken madras and kept in my slow cooker on the warm setting with rice sitting beside so everyone can help themselves- intend to do something like this again, left over cold meats, marinated chicken wings, chilli prawns, salad leaves, baguettes, cheese, pigs in blankets (for the kids) dips and crisps.
Later on I kept some of the beef aside and made yorkshire puddings, put the beef in served with onion marmalade.0 -
We have this on Christmas Eve -
Roast Ham or chicken
Chicken pie
Quiche (2 or more depending on how many people)
Green salad (leaves, cucumber, tomatoes, peppers, spring onions)
Crusty loaf of bread or garlic baguettes
Coleslaw
Pickle
Hard boiled eggs
Possibly some corned beef
New potatoes
Mayonnaise
Cheese
Everything is put out in dishes on the table and we play pass the dishes until all our plates are full! It's lush. Afterwards we usually have some sort of fancy dessert. We have it at some point in the afternoon/early evening to fit round visiting and going to church or going to the pub.0 -
I'd roast a gammon/turkey crown and serve with salads (coleslaw, potato salad, leaf salad etc), pickles and crusty bread0
