Super easy cake (my gran's recipe) and no butter involved!

5 big apples or pears or a mix of both (or you can use canned pears instead)
    4 eggs
    170g sugar
    130g flour
    2 teaspoons vanilla sugar
    2 teaspoons baking powder

    peel, core and slice apples/pears
mix all the ingredients in a bowl
    pour in cake tin
cook in oven at 200C for 40 minutes

edit: it freezes fine too ;)

You can make that even easier with an all in one mix, as long as you want to eat the cake immediately.

Whack all the ingredients above in a bowl and mix together until light and fluffy. Cook as advised above. Fine for two days but gets stodgier than the traditional mix after that.

Add a bit of cocoa in place of a couple of teaspoons of flour, or a couple of teaspoons over very very strong instant coffee (enough water to melt the granules but no more) and take out a spoon of sugar if you want to make flavoured cakes.

it doesn't take long this way anyway i've added in grated carrot before, but for chocolate cakes i make muffins :) we usually have them for 3-4 days as me and hubby don't really eat cakes (we eat muffins tho i love raspberry muffins so make my own)

pop them back in, also when i lift buns out i always leave them in the hot bun tray for 5-10 mins, if you push down on the top it shud move but be firm not squidgy
