Help - baking recipes for someone who cant bake

    I inherited an old Bero book when my granny passed on and I can honestly say that out of the many books I've got, it's the most used and all work without fail! (and I'm not a great baker!)

    also lots of good tips for new bakers on this thread too.

    Just need to remember only mix muffins mixture by hand with a few stirs - it is supposed to be lumpy!

  • I, not events, have the power to make me happy or unhappy today. I can choose which it shall be. Yesterday is dead, tomorrow hasn't arrived yet. I have just one day, today, and I'm going to be happy in it. :)

  • Easiest recipe and a favourite in our house is jam buns.


    200g self raising flour
    100g of butter/marg
    50g castor sugar
    1 medium egg
    Jam.


    Put flour, sugar and butter into mixing bowl and rub together with fingers to get a bread crumb like mixture. lightly whisk the egg in a cup and mix into the other ingredients to bind it. Split into eight, roll each portion into a rough ball with hands, place on baking tray and flatten down a little, Put a small 'well' in the middle with tip of finger or spoon handle and fill it with jam (usually half a teaspoon-ish each). I only put 4 on per baking tray as they do spread quite a bit.


    bake on 180 until a light golden colour, normally takes about 15/18 mins. These are pretty foolproof, even with a dodgy oven.

    Rocky Road - it's not really baking... but it is scrummy!

    I use 300g dark chocolate
    3 tbsp golden syrup
    125g butter

    And then for the bits - whatever you like really. Things I've used (although not all at the same time!!) include coco pops, biscuits, marshmallows, fudge, raspberries, raisins, nuts... depends on what I've got in my cupboards the time!

    I normally clingfilm a plastic oblong takeaway carton and then pour the chocolate mix into it, retaining a small amount of the mix. (I use clingfilm as it helps me get the set mixture out easily and cleanly) Mix all your biscuits etc in and then pour your remaining mix over the top - this just makes sure that the rocky road is more even on the top. Put in the fridge for an hour until it has set.

    Once set, flip over onto a chopping board and peel the clingfilm off. Chop into bitesize pieces and don't eat too much at once or you'll feel quite ill :D

    i make buns once or twice a week with my kids i have a simple recipe using the 4 rule

    4oz caster sugar
    4oz butter (i use value marge because we do it so often)
    4oz self rasing flour
    2 eggs

    mix together the butter and sugar, add in 2 eggs and flour mix it all up (i use elec beaters so it's soooo quick)

    pop into bun cases (so far i've found b&m to be cheapest for bun cases 150 for 89p) and stick in the oven for 15-20mins on 150, then we top them with icing made by mixing icing sugar with warm water and top with sprinkles(bought from af) we do it so often my 5 year old could talk u threw it :rotfl: the kids have them for pudding or after school for a few days


    another popular one in this house is rice crispy buns but made with frosties(own brand ones ofcourse) and rasins (value ones) and ofcourse topped with sprinkles, just melt butter ove a pot of boiling water (if it's cheap stuff i add a wee bit of sugar so it's not too bitter) mix with the frosties/rasins and scoop into bun cases, i then leave them for 5mins then pop them in the fridge for 5mins


    i know these are really simple recipes but with 3 kids round my feet i need easy and quick recipes

    You can make that even easier with an all in one mix, as long as you want to eat the cake immediately.

    Whack all the ingredients above in a bowl and mix together until light and fluffy. Cook as advised above. Fine for two days but gets stodgier than the traditional mix after that.

    Add a bit of cocoa in place of a couple of teaspoons of flour, or a couple of teaspoons over very very strong instant coffee (enough water to melt the granules but no more) and take out a spoon of sugar if you want to make flavoured cakes.
