I have some Tesco value Lasagna sheets that are passed their Best before date and need using.

Does anyone have any quick and easy recipes that do not need meat?

Thx:o

Just to say, don't worry about sell by dates for the lasagna, they'll be fine for at least another year!

  • I would still use them past the best before date but if not boil up some cauliflower and layer with cheese sauce and the pasta sheets, delicious with broccolli, leek, onion, carrot etc.

I would throw in anything you have really, you can't go wrong :)

You could just smash them up and use them for whatever you'd use other pasta shapes for - I had macaroni cheese in a pub a while ago that turned out to be bits-of-lasagne cheese. ;)

you could make a lasagne with herb philly and spinach if you don't want to use meat, and then put a tomato top on it and sprinkle with cheese.

As others have mentioned, the dates on pasta are pretty meaningless. It's dried so will keep for years beyond the date stamp. For a recipe, how about Tuna Lasagne?

Fry an onion, crushed garlic and some mushrooms in a little butter. Sprinkle over a tablespoon of flour and then add 3/4 pint milk to make a white sauce. Stir in a tin or two of tuna (drained). Bring to the boil and simmer for 5 minutes. Season. Layer it between lasagne sheets. For the top layer, mix an egg with 150ml of plain yoghurt. Spread it over the lasagne then sprinkle on 50g of strong cheddar. Bake for 45 minutes at 180C.
