Food about to be out of date

This maybe a silly question but in this year of trying to save money I need some food advice. I have some mince beef which has to be used by today, and won't be as I have some other meat to use by today also. What I want to know is can I cook the mince in a chilli or something and would it then be safe to just heat it up tomorrow to eat?
