ESA/Permitted work/sick/fitnotes

How does ESA work with regard to permitted work and fit/sick notes? My OH has found some permitted work that he is going to attempt (0 hours contract, probably less than 10 hours a week) but is signed off with a sick note. Does he stay on the sick note whilst working - I thought you couldn't go to work if you were signed off sick for insurance purposes or something. (this may well be me talking rubbish)
