Would someone please help me make a vegetarian lasagne

  • Here's my recipe - famous amongst my formerly suspicious carnivorous male friends and relatives!! Makes 4 large portions and is freezable.

    splash of oil in large pan on medium heat, add 1 chopped red onion and a couple of cloves of crushed garlic and stir around for a couple of minutes but not so long that they actually fry. Then add pack of Quorn mince, mix with the onion and garlic, then add a large tin of chopped tomatoes, a packet of chopped mushrooms, small bottle of red wine (one of those 25c ones or just a decent slug of any red wine - Sainsbury's Basics table wine actually works very well) big squeeze of tomato puree, black pepper, salt and a dash of mixed herbs or single herbs like oregano. Also a spoonful of red pesto goes well but is not obligatory!

    Then I stir it all up, leave it to cook for half an hour or so on a medium to low heat and then layer up in a dish with lasagne and white sauce as usual and finish with a decent sprinkle of cheddar on top and some sliced tomatoes and herbs for presentation. Half an hour in the oven at 190 degrees and it's all done :)

    Actually I am now going to make this for my friend to eat when he is cat-sitting for me later this week :A

    I am a vege and often make two lasagnes, I do sometimes eat quorn mince but as Jackie says fry it off first. I do cheat a bit as well and i make a ratatouille with a bag of frozen Mediterranean veg from aldi, and then use it without mince for vegetarian and with mince for meateaters. Lasagne freezes really well as I am sure you know so any leftovers can be used another day.
    I dont think she will feel left out if you have made two and everyone is given a choice.

    What a lovely possible future mother in law you are :D Not everyone would be so considerate. I went through a vegetarian phase (to be fair it lasted about seven years) and used to have to put up with friend's mothers giving me the same chicken curry as everyone else, just picking out the bits of chicken!

    As others have said, be careful about cheese as it's not all vegetarian. Parmesan in particular is one to watch out for. I used to work in a restaurant that constantly included parmesan in its veggie options, but as it contains rennet it's definitely not veggie :( But you don't argue with your head chef.

    I do a roasted vegetable sauce for veggie lasagnes. Dice up courgette, aubergine, peppers, red onions, butternut squash, mushrooms... whatever I have really. Into a roasting tin, toss it all in olive oil and a bit of balsamic vinegar, roast till tender, then put the roasting tin on the hob and add passata or tinned tomatoes with salt and lots of black pepper and a glug of red wine and cook till the tomatoes break down, or of it's passata till it reduces and is nice and thick. Layer up as normal with cheesy bechamel sauce, sheets of lasagne and lots of cheese on top.

    Personally, I never use meat substitutes for this, I don't like them and vegetables are delicious IMO.

    I love the roasted veg options, but we tend to rely heavily on spinach for vegetarian lasagne in this house.....so layers of pasta, then spinach, then an oniony tomato sauce (other roast veg would be beautiful) then bechemal or cheese sauce then repeat the layers twice and with cheese at the top. It looks beautiful cut into, the layers of red, green and pasta-off white.....almost like an italian flag, and its delicious.

    I'm very fond of vegetable lasagne despite being a fairly devoted carnivore. I either do a roast vegetable one with passata, very like lynzpower's, or a variation on this recipe using lasagne sheets rather than cannelloni, or roast veg mixed with pesto (check the label to make sure it's suitable for vegetarians), cubed feta and pine nuts, with a garlicky tomato sauce and grated cheese on top - it's very rich so you need a green or tomato salad with it, I find.

    Does anyone else really fancy lasagne now? ;)

    Hi pink I make my veggie lasagne similiar to lynz as well with aubergine/courgette so its like a mediterranean one, this is my fav - but if your considering using veggie mince bisto gravy is veggie and gives a nice beefy depth just watch the amount of salt you add after

    Both me and OH are veggie. He likes meat substitutes I don't! I normally make either a roasted veg lasagne or, one of both of our favourite meals, a spinach and mushroom one

    Does anyone else really fancy lasagne now?

    been thinking about this since I opened my eyes this morning just getting my shoes on then heading to the greengrocers :D

    I also have a bit of pastry in the fridge so if theres leftover veg then ill make some mini pasties to shove in while the oven is on. Perfect for lunch tomorrow.

    I also agree spinach and ricotta mushroom lasagne ( or canneloni ) is gorgeous. I had one with green lentils in as well it was superb ( OH thought it was rabbit food the weirdo)

    We do eat meat substitutes in this house as I am not that keen on processed meats so a quorn chicken style burger or a linda mccartney sausage roll is just great for me, plus they are the same price as "cheapo" processed meat which I am not convinced by. Meat substitutes are lower fat ( in the main) than their value meat based alternatives which Is good. I don't really like mince ( OS sacrilegious :o) aside from making HM burgers with it, so I would always make spag bol, chilli etc with Q mince.
