I'm almost debt free now whoop! and cheap lunches have been my savour!

What cheap lunches do you make?

This week I made a batch of pasta using

Black Olives 70p
Cherry Tomatoes £1
Pasta £1
Basil 80p
Mozzerella £1
Lemon Juice and Zest 30p
Olive Oil (in cupboard)

Made 5 portions so less than £1 a day :-)

Also a big fan of pasta, pesto and petit pois!!

  • Again, my colleagues had a friday pizza day and I refused to order anything. By the time they had finished there were about 10 slices left uneaten! I glady helped myself...

  • Good shout - bulk lunches of pasta are cheap. Unfortunately for me I can't have to much of the stuff... anything containing wheat at lunch makes me very gassy. I just stick to salads, usually with boiled eggs and a potato salad

Sounds lovely, any possibility you could PM me the recipe? Just not too sure at what stage you'd add the mozzarella

    Thanks :)

  • Wow I thought I was doing well having sandwiches for lunch, but I think this shows it can be done much cheaper. For next week I'm going to try ...

Smart price pasta (will buy in bulk)
    A yellow pepper (in fridge)
    Smart price ham (in fridge)
    Salad cream (in cupboard)

Basically I think buying the pasta in enough bulk and making a huge lot on a Sunday night and a Wednesday night is going to work out cheaper (and be very tasty!)

Will let you know how it tastes!

A big pan of vegetable broth goes a long way through the week, and its very filling.

Potatoes, carrot, turnip, onion, red lentils, plenty of pepper and a couple of stock pots. Healthy, cheap and good on a cold winter day. It usually costs a few pounds to make it as I go for smart price veg.

People at work often spend upto £8 - £10 a day on breakfast and lunch, alot of money when added up over the month!
  • I love making pasta for lunch, it's filling, yummy and cheap! I also have a little box thats just the size of a sandwich and take in sandwiches with crisps. I get a multibag and then they work out about 12p each. I also love a fizzy drink at lunch, I used to spend 65p a day on a can of drink with lunch - now I buy those 'zero' drinks in a multipack which work out about 25p each and only have about 4 calories in, so alot healthier too.
  • We only get 30 mins for lunch and they would prefer we don't al leave. . . so get lunch provided.

The late nurse buys in bulk, £30 for about 15+ people and we always have a good lunch (well, 2 people buy crap!) but essentially all good.

Our head office now copies us with their own funds (when they don;t go out for lunch!)

My best tip for making pasta in advance is to cook the pasta, drain and then run it under a cold tap in the colander.

Then drain properly and add a tiny bit of olive oil.

This stops it all sticking together by the next day.

i often make my sauces seperately and put them together to cook in the mircowave :-) then it's almost like it's fresh :j
