Don't worry Justamum, I will provide!! (well, as much as possible...I'm a bit of a 'throw it in' type of cook so won't be too great on quantities!) I have had a mental week at work so haven't spent as much time on the board as I would have liked, but will try to do better!
Okay, tagine.... sweet potatoes, tin of tomatoes, onions, garlic, squash (butternut,pumpkin or whatever takes your fancy) tin of (or pre-cooked) chick peas, cinnamon and ground ginger - chuck all into tagine (or casserole dish) and cook on medium/low heat for about an hour to hour and half..... I always put fresh chopped mint in after I have cooked it but thats just me!
I have also had sushi this week....sushi rice, cooked then mixed with rice vinegar and mirin, laid on nori sheets, sliced cucumber, avocado and carrot as filling, rolled and served with pickled ginger and wasabi... did a beetroot and apple salad to go with it....nom nom nom!!!!
Other than that, I haven't cooked this week as haven't been around but should do better from now on....
Made a job lot of muesli and granola for breakfasts yesterday so that will save me time in the mornings....

As one of the forum's resident vegans, and one of its resident 'terrible at hoarding then not using up storecupboard stash' people, and a fellow 'throw it in' type of cook, I'm going to be keeping a close eye on this thread too
Among my stash are nori sheets, sushi rice and sushi vinegar - oh, and a pack of the bright yellow pickled radish. Not for the first time, I had an attack of 'inspired' and bought all the bits for sushi-making, but then... well, needless to say, I haven't got around to it.
I've just about reached the point of writing off that idea and using whatever bits I could in other ways [rice for risotto or pudding, nori with tofu for vaguely 'fishy' results, as enjoyed at a veggie Chinese buffet]; no idea for the radish and vinegar, though. Any ideas? Or are you going to say I should just bite the bullet and try making myself some sushi to take to work for lunch this week?Haven't done the GC since February, but a glance at the Tower of Receipts tells me I really need to get back into it... and plenty of other Challenges besides.0 -

Bite the bullet!!! Really, totally worth it!! It's great for work, make a couple of rolls and it will keep in the fridge for a couple of days quite happily...... alternatively, you could use the vinegar in a salad dressing...would be nice with raw beetroot and apple salad - I've never had pickled radish, but I would probably chop it up and put it into a rice salad to give it some kickMortgage 12.12.12 £55842 12.12.13 £42716 14.12.14 £28837 13.12.15 £25913

I would add cocoa for baking fave choc cake - http://www.instructables.com/id/The-BEST-chococlate-cake-ever...that-happens-to-be/ I use the recipe to make cupcakes a good frosting is peanut butter mixed with silken tofu - tastes like snickers and jam/marmalade for breakfast and mango chutney for making sauces and veggie burgers (mixed with some beans etc)DMP 2021-2024: £30,668 £0 🥳
