Gingerbread men and royal icing

Please can someone help me? Made the gingerbread men, came out well but the royal icing OMG can't do it, googled and youtubed and watched demos but it just will not turn for me and not drop off the spoon, it is just far too messy and runny and cannot pipe it at all...so far thrown 2 pipings bags in the bin because how to clean?

Such a mess... what is the exact ration icing sugar to egg substitute, I really want to master it but am failing terribly:D

    This is how i have learned recently:
    1,Measure 2 tablespoons of ren white into a clean beaker/jam jar, add 5 tablespoons of cold water, put lid on & shake, leave to stand over night in a cool place.
    2, Strain mixture through a sive into mixing bowl.
    3, Weigh out 500g of Icing sugar & sive into bowl a little at a time, gradually mixing with a wooden spoon, beat well

    I make a lot of cakes and I cheat and use the Royal Icing sugar from the supermarket as you can then make any amount you like.

    When studying cake decorating, we used to use very stiff royal icing and water it down with egg bit by bit to get the right consistency. With the royal icing sugar I make it stiff and then add water literally drop by drop to get the right piping consistency, I test it by seeing if dropping the icing off the spoon will keep its shape or just turn into a blob. If it goes too runny I can just add more icing sugar.

    Buy the one you just add water and be very delicate with the water, tiny amounts at a time :)

    I use Silver Spoon Royal Icing sugar. Its just with the normal icing sugar in the supermarket. Its about £1 a box. Its a lot easier to use than making royal icing with egg whites!
