There is no reason why any food, including meats, cannot be frozen more than once (even without changing its state). The 'general' advice given is, as in many things, erring on the side of caution and set to the lowest common denominator (that is people who are lacking much/any sense).
If meats are defrosted slowly in a refrigerator then they can indeed be re-frozen without undue risk. The problem arises when people thaw at room temperature, which allows microbes to start breeding on the defrosted part whilst the centre is still frozen.... defrost in the fridge and this is largely avoided.
Naturally, all foods suffer some degree of loss of texture on each freezing and thawing, but that will only lessen the palatability and not cause any harm.

Taxsaver - i`ve done this a couple of times with beef and its been fine. You are quite right in that this is the safe way to do it.
Don`t think that i dare do it with chicken or fish though.
Many moons ago i worked with frozen food so i learn`t a lot from there.

SD - I do it with chicken too without a problem, but can't think that I have done recently with fish... but that's probably more because fish tends to be in portion sizes already iykwim so I've not had any surplus that has needed re-freezing.

I did mention i read it twice lol!
Just going to sit down to a lovely (reduced) rotisserie (?) chicken pannini (also reduced)....Shame everything else seemed not worth the hassle.
On a side note, i noticed today that Mr T had a lot of deli products reduced, but they were in rather large portions, does anybody else notice that?
I would quite happily have got some scotch eggs, sliced turkey/chicken or even some spring rolls, but in portions of about 30 or 14 slices, i could not eat it all! :eek:0 -
There's a thread with more info about refreezing food - info from USDA and Birds Eye (post #14); of all the things I've learned on this forum, this is one of the best... don't throw the string away. You always need string!
