burgers.....what can i do with 'em?

    how about mince them up again and mix with mash potato like a sort of corned beef hash only burger instead of corn beef IYKWIM
    Who I am is not important. What I do is.
  • I would mash them up and make them into chilli!

    Chuck some garlic and chilli powder or fresh chillies in a pan, fry up, chuck in the mashed up burgers, fry a bit more then chuck some tinned toms or passata in, some kidney beans, perhaps a dash of sugar, balsamic and a few herbs and let it bubble till ready!

    The Kids (5&6yr old) have just tried a little bit and they spit it out. Normally they like my burgers.
    I guess I can try hubby tonight :D but I don't expect him to like them

    Isn't there some form of dish I can make where I can "hide" the burgers in ?

    Do you have a sauce you could top them with? Thinking a simple tomato thing - with some onions and garlic? Brew them up in the sauce for a little while and serve with spaghetti?

    For some reason turkey mince always tastes wrong to me - my mum used to make burgers and I can't stand them now!
    Maybe save them for a BBQ (marinade them first) - with a bit o'charcoal you won't be able to tell what they were!

    Or as above - chop them into quarters and use them as meatballs!

    I made turkey mince burgers a few months ago and they were one of the worst things I've cooked. I'm usually an OK cook so it isn't that I'm just rubbish!

    I re-shaped them into meatballs after adding some more seasoning and sauces then cooked them with pasta and a tomato based sauce. They were still awful in the new format.

    I have to say that I'm not surprised they tasted horrible with that recipe. It has more cr*p in it than a commercial burger! Keep it simple ...

    BEEFBURGER

    Makes 2 quarter pounders

    INGREDIENTS

    250g of lean minced beef*
    Ground pepper to taste
    1 tablespoon of oil

    METHOD

    Divide the mince into two halves. Squeeze each half into a ball and then flatten it out into a disc. Make them firm, so that they don’t fall apart. Make them chunky, as thin edges will cook too quickly. Season with the pepper.

    Put the oil into a frying pan on a medium heat. Fry the burgers for about 5 minutes on each side.

    ADDITIONS & ALTERNATIVES

    Add some finely chopped onion. Add some herbs.

    Use minced lamb, pork or turkey, whichever is cheaper, instead of minced beef. If you use minced lamb, add some finely chopped mint, dried mint or some mint sauce. If you use minced pork, add some finely chopped apple or some apple sauce. If you use minced turkey, add some cranberry sauce.

    If you need to make the mince go further, add some grated carrot.

    If the burgers won’t hold together, add some beaten egg. If you make the mixture too wet, add some breadcrumbs.

    Cook the burgers under a preheated medium grill for about 5 minutes on each side instead of frying. If the mince is very lean, you might need to coat the burgers with a little oil.

    TIPS

    When squeezing the mince, imagine it's someone you don't like.

    Chilling the burgers in the fridge helps them to hold together whilst cooking.

    You can make the burgers using a burger press. This is a round mould, which you fill with the mince and then press it into uniformly sized burgers. However, hand made burgers have more ‘rustic charm’ and there’s no washing up.
     
    * Use good quality lean and finely ground mince. The cheaper the mince, the higher the fat content and the more coarsely it is ground. Use chuck steak, which is reasonably cheap but doesn’t have too much fat, and either get the butcher to grind it, or invest in a meat grinder and do it yourself.
    The acquisition of wealth is no longer the driving force in my life. :)
