cookie & fudge presents in advance??

Hi I am wanting to make cookie/shortbread/brownies as gifts as well as fudge & peppermint creams. I've looked at loads of recipes but it never seems to give much indication of how long they last. Ideally I would like to make at least a week before, I guess with cookies & could do the dough & freeze it. Can you cut them out & freeze & cook from frozen or do they need to be defrosted first? Any advice/ideas or recipes would be much appreciated!

    not sure how long they would last after cooking (cause never last a day in our house lol) but i make my cookie dough and freeze it in a fat sausage shape covered in cling film, while frozen cut off however many cookies i want to cook (from frozen) and put whats left back in freezer , longest it ever stayed in freezer was a month (as it fell to bottom lol) hope this goes someway to answer your question, julie x

    if you pop on bbc 2 website lorraine pascale has just had a new series she made easy peppermint creams and fudge they recipes should be on there

    You could try making biscotti s they will keep for a couple of weeks. I fancy making these as will be a bit different..

    My mum makes shortbread rounds from a recipe she found in a BeRo booklet and it is the best biscuit ever.

    She usually makes the mix then rolls into a fat sausage and stores in the fridge for ages. (As long as the date on the butter really).
    I've regularly had mine in the fridge for a couple of weeks, when I want them I just slice off the rounds and bake them then sprinkle with sugar while warm. Yum!

  • Tbh the book doesn't say; I said it was old - 1970s! The fudge I would have thought would have been ok for a couple of weeks as it's cooked. Guess you'd have to be more cautious with peppermint creams (raw egg white or condensed milk) and truffles if made with cream. But you'd be wanting to give them as fresh as possible anyway, wouldn't you, so defrost as late as possible?
  • Thanks - I'm pretty sure they will be consumed quickly, it's more that I want to give them as fresh as possible but with loads of christmas stuff on for the kids the last week before xmas willbe short of time. Would be great to be able to make early dec & then freeze, defrost xmas eve to give on xmas day & boxing day. Love those Lorraine Pascale recipe's but wish they'd have said if it could be frozen.

    I have made her fudge and its so easy and yummy! Last batch I had was still yummy after a week
