HI, I brought a butternut squash for the first time yesterday!! :eek: (terrible I know that I havent had it before) and wondered what to do with it?
I thought I had seen or read somewhere a recipe where one was cut in half and stuffed with something?

You can make soup, or you can roast it in pieces like parsnip.
Peeling it is the hardest thing - do a search in the forums and I think someone had a tip on how to make it easier.You're only young once, but you can be immature forever0 -

We're having butternut squash with our roast in about 90 minutes!
I slice it into about 1 inch discs, drizzle with olive oil & roast for 30 minutes. It tastes really nice with some rosemary on it. We actually eat the skins after they have been roasted as they are very soft (unbelievable but true) and quite tasty, but I scrub the skin well before roasting.0 -
Steamed butternut squash goes really well with steamed pears too, for an easy hot fruity pudding... sounds a bit odd at first, but give it a try, and it's ideal and healthy for kiddies as well!Homer: I want to share something with you, Bart: The three little sentences that will get you through life. It is too much like hard work to peel it!#
You can slice it with a sharp knife and steam or microwave the slices. The skin is soft and edible
Or (my fave) wrap in tinfoil put in oven for an hour on gas mark 5. When cooked, cut in half, scrape out inside and mash with a little butter (south africans put a small amount of sugar in too, but I don't think it needs it)
Or scrape the inside out, add small amount of stock, bring to boil, whazz with stick blender - instant soup!I'm a retired employment solicitor. Hopefully some of my comments might be useful, but they are only my opinion and not intended as legal advice.0 -
i use them together in soup, just not too much of either, and i'd add an onion, couple of carrots and maybe some swede tooMum to gorgeous baby boy born Sept 2010:j0

Hi, for anyone thats interested, Butternut Squash cooks wonderfully in the microwave - just peel (the difficult bit), cube, add 2 tablespoons of water and cover lightly. Cook on high for 5 - 7 mins depending on microwave power. Then mash with butter (unsalted is best) Yummy!!0

I used butternut squash and sweet potatoes in soup yesterday as I didn't have any carrots and my 4 year old inhaled it rather than ate it! It went down a storm!0

butternut squash is great in risotto too and I love both squash and sweet potato roasted. Both are great for kids as they tend to love the sweetness.
Rosemary goes really well with sweet potato and chilli is lovely with butternut squash.0
