    Thanks Rikki :) I have decided am going to give mince pies a bash too as DH loves them so thought that he would appreciate them. The fruit is sufficiently boozy at the minute so will have to make sure there is no sampling going on when they help with the mixing!

    Although, maybe they might sleep better with a decent glug of brandy inside them ;) Hehe!

    I've searched many recipies online and try to make them this weekend. If they turn out to be good, I'll make them on Xmas. :)
  • Grrrr since complaining that I have made too many christmas cakes, the last minute cake recipe that I linked to earlier in the thread has now been tested!! Turns out OH fancied something for snacking on in the van at work and took 1/4 the cake with him earlier in the week. If it helps anyone else he says it's really nice, but it looks rather moist as he hasn't left any time for the extra brandy to soak in (not nearly enough in it to take him over the limit..................the huge square cake I've made, on the other hand, could intoxicate at 12 paces!!).

    Well i started the delia cake today and have all my fruit soaking. I decided not to buy the pack as wanted to make mincemeat as well so have made 4lbs of mincemeat today as well!

    Oh My Gosh, my cake was amazing! Everyone loved it! I cut the top abit as it was a tad uneven and the off-cuts were demolished lol, so the Delia recipe gets a massive thumbs up from me :)

    Glad I found this thread. I'd love to make 2 wee cakes as gifts for my elderly neighbours. They have been good to us through the year,so I thought a nice Christmas cake would be a nice gift.
    I like baking but I've never made one before. None of my family like it!


    After reading through I think I'll try delias recipe in a square tin, then quarter it. Does anyone know if that will be too small? One is for a couple and one is for a lady on her own?

    I don't think I've ever marzipan/ iced a square cake before either, is it harder than a round?

    hi there, about 6-7 years ago, i thought i would have a go at the delia xmas cake, took ages but came out looking ( and smelling) lovely...............trouble is, it is STILL sat there all tightly wrapped up in its box :eek:

    took it out the other day, seems fine, although you could get high off the alcoholic fumes still coming off it, so what does anyone reckon, still ok to eat, or will it be dry and just yuck

    don't want to throw it away if i can help it, but don't want to go to the trouble of decorating it, or giving it to someone if it tastes rubbish or is now a health hazard!
