Hi guys
Having a bake sale in December, primarily for a rehab center for people who've suffered brain injury and was wondering if people here had any prior experience that they could share.. lots of ideas and no real idea of where we're going with them..
any advice gratefully received!

not sure where you are in the country but i do fairs and the best sellers are homemade tablet,scottish sweet and homemade macaroon bars- not the macaroon as in cake like things. both are easy enough and can be made in advance
tablet 2lb granulated sugar
1 tin condensed milk
1/2 tin ordinary miilk
4oz margarine
put in pan and bring slowly to the boil - stirring now and again once boiling stir lots so doesnt burn, boil until drops sets on a plate or form in a cup of cold water then pour into a greased baking tray, leave for about an hour and half and score your pieces - could be made into bars or into chunks - leave about another 4hrs or preferably overnight and then turn out onto a dishtowel and break into pre scored pieces - you can make up little bags, bars or for a christmas sale i would have little dishes tied up in cellophane -BEWARE THIS IS EXTREMELY HOT CAN CAUSE SEVERE BURNS AND ONCE POURED SHOULD NOT BE MOVED UNTIL IT HAS COOLED
MACAROON BARS - boil one medium sizes potato - no salt until soft let cool and mash completely making sure there are no lumps whatsoever then add approx 1 large packet icing sugar a bit at a time it will go from looking like soup to looking like and feeling like a lump of marzipan which you can then roll out to about an inch thick cut into whatever shape you want - i usually make bars or chunks - leave overnight to dry (do not put in the fridge)then next day dip in chocolate and role in toasted coconut. (dont be tempted to use more than one potato first time i made it i thought thats not a lot and used three large i ended up using 6 packets of icing sugar and 400 chunks of macaroon!!!!!!!)

Oh thanks for that, its in London, in a small corporate building on a Friday at breakfast. Friday not ideal for baking so trying to think of things that can be pre-made and frozen and pre-packaged... I have lost so much time searching recipes on the internet!! I'm not a great baker so trying to rope more people into it..
I'm going to make it christmasy themed...

These go down quite well at Christmas fetes. You can fashion the antlers with melted chocolate on greaseproof paper.0

I have found that things full of chocolate sell really well, I make variations on a biscuit traybake, normally crush up a pack of digestives, melt half a block of butter with about 4 tbsp of golden syrup and about 3 tbsp cocoa powder. Once it's melted add the biscuits, and you can also add anything else you fancy, malteasers, dried fruit, marshmallows...there is no end to it.
It makes a really dense mix, just press it into trays and top with melted chocolate, allow the chocolate to set and slice it up.
Sometimes the mixture can seem a bit greasy, I just add more biscuits until the butter is absorbed.

Brownies are very easy to transport if you have to carry stuff. Otherwise cupcakes are popular.Armchair shopper and cook - albeit with a ready meal on my lap and "plates of meat" in a foot spa!!!!:rotfl::rotfl::rotfl:0

Got a few offers of help from within the building, I know that its weeks away but I'm getting all excited now!
Emailed my team which in total is about 20 people so hopefully there will be some cake donations hada couple of can i just give you some money replies which isn't really what i was getting at but still..
Going to trial a few biscuits and cakes for halloween weekend and see how I get on.. hoping to have a small raffle too..
