fresh apricots - ideas?

I bought some whoopsied apricots from Mr T the other day thinking my boy might like them, but unfortunately not... I always forget that apricots are nothing like peaches and actually really dry and not particularly nice to eat fresh! So now I have a punnet of the things and want to put them in something - any ideas? Preferably something I can take on a picnic tea this evening
Can I just put them in anything you'd usually put dried ones in or will I need to add flavour as they're a bit tasteless?
Thanks for any help you can give!0 -
send them to me - I LOVE fresh apricots!
can you add them to some icecream for a pudding? cook them a little & make a crumble? puree them & make a yummy sauce for icecream? add them to a smoothy?0 -
I chop them up and use in muffins/fairy cakes. Upside down apricot cake? Another idea is to make a crumble/flapjacky type mix, put a layer in a swiss roll type tin, slice the apricots and put a layer on top and top with crumble layer then bake. I find the flavour is better with some vanilla seeds/extract. Sometimes they go bad without going particulary soft - if this is the case cut in half - leaving skin and seeds in and simmer gently with a tablespoon of water (and any other soft fruit that's on its way out). when all soft and gloopy I fork the stones out, add a couple of spoons of sugar and simmer until really thick and you have a basic compote. I pop the gloop in a jar and keep in the fridge - I use it to stir in yoghurt, with icecream as 'jam' in a sponge pudding.0

Thanks guys I knew I could rely on OSers to come up with something quickly! I like the flapjack idea but will do the compote if they're not good enough for that.0

Good apricots are lovely; bad ones are made from cotton wool, but with less flavourAs this has fallen from the front page of OS, I'll add it to the existing thread to give you more ideas.

Well in the end i used a honey and apricot flapjack recipe that i usually make with dried apricots....and it was amazing! Not sure what happened in the oven but the apricots turned juicy and full of flavour somewhere in the cooking process!0

They go well with lamb and spices eg cinnamon.

Hello, im a long time lurker and love reading all the threads on old style and thanks to everyone on here have saved a fortune!! I have been whoopie shopping tonight and now im need of a bit tonight of help!
I have bought some reduced (10p) punnets of fresh apricots and dont really know what to do with them. I have also bought a reduced whole chicken (80p) fresh runner beans (10p) bunch of fresh beetroot (20p) and a pack of cougette (20p) and a bag of jersey royals (20p). So I have invited my mum and dad for tea tomorrow night and thought I could do something for dessert with the apricots, does anyone have any suggestions??0 -
I stewed plums in the microwave today to have with yoghurt for breakfast but stewed apricots with vanilla icecream would make an easy and tasty dessert"Life is not about waiting for the storm to pass...it's about learning how to dance in the rain." ~ Vivian Greene0
