fresh apricots - ideas?

I've got some reduced fresh apricots hanging around - the kids are bored of them as they are. Any ideas of what I can do with them?

there was a lovely looking recipe on diet doctors the other night using apricots: remove from the stone, chop, and put into some ramekins with some pudding rice. Add oat milk and cook in the oven, to give a rice pudding with no sugar, except whats in the apricot (i.e. fruit sugars).
no info on amounts, oven temp or timings i'm afraid. I did look on the five website but maybe someone else can remember better - or maybe time to experiment!

Hope you don't mind me asking, but how were the fresh apricots to eat raw, and where did you buy them? I haven't bought them for years, after bad experiences of them looking lovely but with the taste and texture of cotton wool. The same for ones I bought in France, too.
Would love to try them again.
As for recipes, substitute them for plums in any recipe.

We buy them from the local farm shop that sell fruit and veg.... they are great (and cheap)0

If I have any fruit that needs using up I usually make martinis. We're having kiwi martinis tonight - yummy yummy. Plum and apricot ones are very nice too. Just muddle them with a bar spoon and add vodka (cheap filtered obviously)0

Or fill the hole with a bit of marzipan, drizzle with honey and toast lightly under the grill....dollop of cream....yum!Learn the rules so you know how to break them properly!0
