    Thank you for taking the time to reply to my post :T Selling to the neighbours would be a bit hit and miss because some days they all lay but then on other days I may only get one egg from the lot of them !

    I like the sound of lemon curd and the cake loafs, will have a look on here for some recipes.

    May I recommend THIS lemon curd? You obviously don't have to put the limoncello in (but wow if you do :D), but it just makes a lovely tasting curd.

    I made some last night (and totally cheated using bought lemon juice :o:eek::A) but it tastes fabby :T


    p.s. have made it totally fresh (with limoncello) and it was amazing. Just don't put TOO much alcohol in :rotfl:

    Muffins,carrot cakes,and mini quiches are all good for lunchboxes.
    When I make a loaf cake I slice it before freezing so I can get a bit out at a time if the boys have other cakes.

    Seriously, think about selling to your neighbours. Even if it is a bit 'hit and miss'. One of my neighbours has hens, and quite a few of us buy our eggs off her when she has them. If she doesn't have any, I just get them elsewhere and get hers when she gets some again. We all do that. She sells them for £1 for 6 and taste fab compared to what you buy in the shops. No-one minds if we have to wait for them. I've even bought 3 off her if that was all she had and I needed some urgently.
