Baking to freeze

Hi everyone

I have about 20 eggs to use up, we have 4 chickens and cannot keep up with their egg production at the moment ! :j I have recently been made redundant which means that as money is tight at the moment I thought I would have a go at batch baking for lunch boxes etc. Does anyone have any suggestions ? I have made cupcakes to freeze, un iced, but would prefer goodies that I can just take out of the freezer and they would be ready to go after defrosting.     I tend to make loaves of all descriptions - fruit loaf, banana loaf, gingerbread etc and slice them before freezing - I then put only a couple of slices in each freezer bag so we dont get fed up of the same loaves. This way it is great for Hubbies sandwich box, as if I had made one without freezing he would eating the same thing for days! Rock buns freeze really well also.

    Make cupcakes that do not need icing such as ones with currants/raisins in. Cookies freeze well. I also freeze yorkshire puddings so I can add to some stew out of the freezer for a good ready meal.

    Hi..i usually do what suzybloo does..i also make meringues and then lemon curd with the egg yolks..lovely..
    i have 5 chickens and trying to keep up with them is impossible..i do however have a freezer full of cakes,sponges and fairy cakes etc..nice to have them though especially in tough times...

    Or sell them yourself to the neighbours.

  • Meringues are great to freeze and defrost normally in the fridge. You could make a big batch and freeze them large for pavlovas or crush them up when storing to make Eton Messes? Will use up a lot of egg whites, and the yolks can be used in pastry, and this recipe needs 4 egg yolks as well as whole eggs. They're great for the freezer and SO scrummy!

    I freeze brownies - they can be warmed up slightly in the microwave and served with ice cream for pudding, or just put in lunch boxes still frozen and they'll be perfect for lunch.


    p.s. they can also be eaten straight from the freezer :o :A

    If I had a surplus of eggs I'd make quiche, egg custard tarts, lemon curd tarts and meringues, all of which freeze well. So if you like, you can mail me some ;).

    Just a note....gate sales are fine (date the eggs and pute a sign up- saying eggs for sale (you're not allowed to say organing/fresh/free range for normal gate sales))....for selling through a local shop or too local caterers or kitchens you need to follow slightly different protocol and have your birds vaccinated for salmonella. It might be that with four hens that neighbours are the best outlet for sales. :)
