meal ideas

im in need of some inspiration!

i feel like we are always eating mostly the same foods week in week out and was wondering anyone had any ideas. We do eat quite a bit meat with usually meat every night, this varies what kind. right now i have stew, chicken fillets, mince, minute steak, and bacon. Veg wise i always have carrots, potatoes and onions and right now i have masses of mushrooms. DH is a plain (and fussy) eater but is willing to try most things and the kids are 2 and 4 so not huge eaters. DH also doesnt like anything tomato based with makes it a pain as the kids and i love bolognese etc and i often make this for us and something else for him!

    You could use a bit of the chicken and a smidge of the bacon with the veg and mushrooms to make a potato topped pie. Or even some of the steak and veg with mushrooms.

    I make the same pie with leftovers from a roast and the stock from the bones - I just dice onion, carrots and celery and fry them off in a pan, sometimes with bacon. Add chicken and chicken stock then bubble the stock down to a kind of thick gloop (attractive sounding I know), then add mushrooms and anything else you fancy (I like peas, kale or broad beans) and even a touch of something creamy.
    Put it in a oven dish and top with pastry, mash or sliced potatoes. It goes down a treat with my family and friends.
    The steak would work in the same way, but with plenty of pepper.
    Doing that with the stew would also work.

    You could also chop up a chicken fillet and make kebabs with onion, peppers and mushrooms (or whatever you have) and serve with a big salad, pittas (18p from Mr T's) and some homemade chips. That would help stretch it further.

    With the mince, you could stretch it with grated carrot and onion and make a lasagne or even pastie/pie type things with added chunks of carrot and potato. Great for lunch.

    Otherwise, mushroom stroganoff might be nice. Made with quark or low fat creme fraiche if you're watching fat content and served with rice, it would be reasonably filling.
