feeling smug: leftovers

hiya
just wanted to say that I am feeling very pleased with myself. I looked in teh fridge this evening and wondered what on earth was for dinner (my meal plan has disappeared from the fridge door and although i *think* it was to be salmon tonight it is still frozen as i didn't take it out of the freezer last night :rolleyes:
But with some creativity i have ended up making a veggie and beef fusilli pasta bake.
i chopped up all the dying veg and sauted with a tin chopped tomatoes and added the left overs of the spag bol from two nights ago. i am now boiling some pasta and making the end of the cheese stretch to make a cheese sauce to pour over the top before baking in the oven (using a little english mustard to make it taste more cheesy as there is a lack of chedder!!)
hopefully this will taste very yummy and feed the ever hungry OH.
anyone else making leftovers tonight???:D

I had the VERY disappointing leftover roast Goose from Sunday (from Lidl) for lunch - I made it into a soup and although I wasn't looking forward to it at all, it was quite OK. Not brilliant, but OK.0

Not quite leftovers, but arrabiata sauce with bacon I bought to wrap the chipolatas in at Christmas (heavily smoked, so it lasts a long time).0

I had some home made soup and some chicken casserole left from yesterday so I baked a homemede French loaf and that stretched the leftovers to a meal for five people tonight."This site is addictive!"

I'm debating doing something with the leftovers I have in the fridge... had better go smell the cheesy mash pie and make sure it's still edible.... I think it should be though! Will be grilling some bacon and then adding it to the cheese and potato pie to make patties (similar to bubble and squeek but sans the cabbage), and having those with some sweetcorn, steamed veg and gravy methinks!

left over boiled ham and roasted chicken breasts from sunday turned into soup, with a packet mix added, but lasted from sunday till today so a bargain, isnt it??to be updated:;)0

I am just in from work and on the drive home I was totting up how many portions I got off the Xmas Day chicken - I am making curry with the last of it tonight. For just under £5 for a large Mt T fresh chicken I have got 14 individual servings plus the most delicious pot of soup I made with the carcass, bones etc. I think that is pretty good going!
[The large chicken I got in Somerfield on Boxing Day for £1.05 is going to be sooooooooooo much better! Can you imagine c14 portions plus the basis for soup for just over a £1! That will warrant buying another Thomas train for DGS1 - he knows Granny a sucker! He is very familiar with ToysrUs - I wonder why!]
I know I am using a tin of curry sauce which I bought ages ago BOGOF but it was for emergency cupboard use and has been there for ages and we are sick of looking at it. Think that can now be classed as a leftover. Only keep an odd tin or jar in cupboard for emergency use but they can be handy.

Had it out of the cupboard - it was Homepride and we thorougly enjoyed it. I don't think I will not slate shopped bought sauces in future!

We had the same as yesterday - beef stew and bread and butter. Always tastes nicer the next day.

I had leftover cottage pie from Sunday. Same as last night, only last night I had some leftover brussel sprouts which I'd cooked Sunday night and wasn't sure whether they would be OK reheated. Bunged them in the microwave for a couple of minutes and they were fine.
Tonight I had the cottage pie with beans, being absent minded I tipped the whole can into a basin and microwaved the whole lot. Now I've got half a tin still sitting in the basin - they've gone cold, will hope they reheat again tomorrow OK! Will have them tomorrow lunchtime with the last of the loaf I baked on Sunday. Will have to find non-leftovers for tomorrows tea!Make £2025 in 2025
