The problem is that dates can vary incredibly in quality. The dry manky ones would be fine for making chutneys etc as you can pre-saok them and the heat does the rest. But if you want to eat dates, the foil-packed ones are the most readily available and suitable. Nothing beats the dates in Syria though - huge, soft and dripping in date "honey". Yumcious.

Try the local halal supermarket, if you have one near by. Ramadan just finished last month so they usually have dates leftover and sometimes at reduced prices : )

Tesco Halawi dates 200g £1 are pretty good, I eat them all the time and prefer them now to the glovebox dates. They are with the wholefoods near the veg. HTH0

Thanks everyone for your replies,:j sorry I didn't get back sooner, but its been a hectic few days. I have just bottled the first batch and will be out and about next week looking up your suggestions. Please find a link to the recipe below for anyone who would like it. I use malt vinegar for cheapness, but sure it would work very well with cider vinegar too:

I forgot to say thanks for the suggestions about the Asian supermarkets. Unfortunately I don't think there is anything like that around here in deepest rural Kent
