Egg and lemon soup - I am not mad!

Yesterday I made some egg and lemon soup for myself. My Grandfather was Cypriot and he taught us all how to make it.
I have brought it to work for my lunch and when people ask what i am eating they look at me like I am mad when I say "egg and lemon soup".
It is so delicious and cheap to make.
Does it sound that bad?

It is so easy.
Cook either rice or small pasta (can't remember what it is called) in chicken stock. Once cooked add more chicken stock to whatever consistance you like. (I like mine really thick so don't add that much).
Leave to simmer.
In a bowl beat together 2 eggs with salt and pepper and the juice of a lemon. With a ladel very very slowly add some of the chicken stock to the egg mixture (make sure you keep stirring the egg mixture or it will curdle). Keep adding more of the chicken stock until the bowl is full. Then turn the heat off the soup and pour all the egg mixture into the rice and chicken stock.
I am not explaining it very well but it is soooooo tasty!
You can add more leon if you like.Lydia

Thanks for the recipe Lydia, I've always fancied trying avgolemono and we have a surplus of eggs at the moment (both FIL's and DH's colleague's chickens laying like mad!) so I might try it for my lunch.
