    I peel and slice into largish chunks (dont like crumble fillings too mushy) and stew in a little fresh orange juice and a knob of butter and sugar to taste. Yum!!

    Yup that's me too though I stir the honey in afterwards depending on how sweet they are.

    We are lucky enough to have a apple and pear tree this year, so I am looking for inspriration too; one of my friends swears by this but I will have to justify the cost!

    Lizzy - Yup, the whole thing - If I am doing cooking apples I chop into about 8 bits. Eaters might not mush down quite the same a Bramleys, but once soft should all go throught the mouli.

    I also use the mouli for veg soups etc, gives them a really nice consistency. And if I am making fish soup, I put the prawn shells through, this gives the soup a fab fishy intensity.
    Think big thoughts but relish small pleasures
  • If you add lemon juice to the water the apple doesn't brown and the sugar added later counteracts the sourness.
