Ranch Holiday in USA -Recommendations needed

Hi
We would love to go on holiday in the us and stay at a working ranch that caters for beginners, offering daily treks and other ranch activities. I have googled it and found various websites that sell this type of holiday, but there seems to be a vast choice so I was wondering if anyone can recommend one? We don't have a particular place in mind so are quite flexible but would like to go next summer, after mid June.
