    Gluten is a constituent of wheat made up of two different sorts of proteins. In order that bread can rise, you need gluten so the bread can 'stretch' when the yeast makes it rise. I think that you 'knead' bread to help develop this 'stretchiness' of the gluten.

    For those with an intolerance to Gluten, or even full-blown Coeliac Disease, Gluten-containing products have to be avoided. This is not so easy, especially if you like to eat out as Gluten is effectively 'hidden' in a wide range of processed products - though the word 'gluten' rarely appears amongst the list of ingredients.


    Coeliacs have to avoid all foods containing gluten or the similar proteins found in barley and rye. Some Coeliacs also have to avoid oats.

    Coeliac UK (formerly the Coeliac Society) is a charity which assists people with Coleliac Disease, Gluten Intolerance and Dermatitis herpetiformis. It produces a yearly gluten-free food book (updates monthly on Ceefax & E-Mail) listing products available in supermarkets etc. that are guaranteed gluten-free.


    Historically, it was thought to be a children’s disease characterised by a ‘failure to thrive’ with both physical and mental retardation. The cause was only discovered during the Second World War when people were on restricted diets. But the age of onset of diagnosis is now increasing and even elderly people are being identified for the first time - my mum was aged about 74.


    Coeliacs are diagnosed with a blood test. If the blood test is positive then an endoscope is used to look at the villi in the in intestines. In Coeliacs the villi are ‘flattened’ which decreases the surface area available for food absorption. In fact Coeliacs are often discovered because this absorption problem – they have fractures from Osteoporosis (failure to absorb calcium) or are anaemic (failure to absorb iron).

    I get their baguettes on prescription and they are nice.
    They also make nice rolls, sliced bread, pasta etc.

    I also like Ogran corn crackers. Good luck. Some GF stuff is not nice. :eek:
