    Veggie Chilli

    1 onion, finely chopped
    1 green pepper, deseeded and finely chopped
    1 jalapeno chilli, finely chopped
    3 cloves garlic, finely chopped
    Easiest way is to stick all the above, together, into a food processor and chop.

    1.5 tsps ground cumin
    2 tsps paprika
    0.5 tsp dried thyme
    0.5 tsp crumbled dried sage
    1 tsp dried oregano
    0.25 tsp chilli powder (more if you like it hotter.)
    8oz brown or green lentils, washed
    Can of kidney beans (or any beans you like)
    2 veggie stock cubes, crumbled
    Tetrapak of creamed tomatoes
    3 tbsps chopped fresh coriander
    1Salt (to taste)

    3 tbspns oil in a nice big pan, heat up to medium hot, add the chopped ingredients. Stir and cook until just browning, about 5 minutes or so. Turn heat down to low, cook for another 3 mins. Add all the other ingredients to the pan plus 1.75 pints water. (I add the salt right at the end). Bring up to the boil, cover, simmer gently for about an hour until the lentils are soft. If it's too liquidy for you, remove lid and turn the heat up a little to evaporate some of the juice off. Then add salt and taste. I've also made this with twice the quantity of beans - I added an extra tetrapak of borlotti beans. Serve in deep bowls, with Tortilla chips on the side to dip with grated cheese slightly melted under the grill.......!
