3-week vegetarian dinner plan

I've just done my meal plans for the next 3 weeks (dinners only as breakfasts and lunches will be cereals, and sandwiches), and thought they may be useful to someone who is stuck for ideas. I will edit to add links to any recipes I've used where applicable, and will type up any that I've made up below. If anyone has any questions about any of the recipes, or about ones I've not linked to, please ask.

Week 1

Sunday: Vegetable fingers, mashed potato and baked beans
Monday: Spanish omelette and salad
Tuesday: Cottage cheese jacket potatoes and salad
Wednesday: Veggie burgers, couscous and sauted courgettes
Thursday: Falafel, tzatziki pittas with salad
Friday: Sweet chilli vegetable stir-fry and noodles
Saturday: HM vegetable soup and garlic tear'n'share loaf

Week 2

Sunday: HM vegetarian cottage pie and baked beans
Monday: Chilli Beanfeast, rice and sour cream
Tuesday: HM Pesto potato bake, veggie escalope and salad
Wednesday: HM vegetarian sausage pie and baked beans
Thursday: Linda McCartney country pies, mixed vegetables and boiled potatoes
Friday: Spinach & ricotta tortellini with sweetcorn & value pasta sauce
Saturday: Veggie burgers, HM pesto potato bake and salad

Week 3

Sunday: HM Gardener's pie (thanks CCP) and salad
Monday: BBQ baked beans, veggie sausages and mash
Tuesday: HM Cheese & onion omelette and salad
Wednesday: HM Vegetarian pasta bolognaise and salad
Thursday: Chilli Beanfeast fajitas with guacamole & sour cream
Friday: Vegetable curry and rice
Saturday: Pizza and baked beans

    Ingredients:

    1 bag of seasonal root veg (onion, carrots, swede, potatoes etc)
    1 vegetable stock cube
    1 small potato (if not included in veg bag)
    1tbsp olive oil
    1 tsp Herbs de Provence (or any other herbs of your choice)

    1. Peel and chop the vegetables into 2cm cubes.
    2. Dice the onion. (If your veg bag contains leeks, prepare in the same way as the onion.)
    3. Heat the oil in a large pan (don't use a teflon coated one - see no 8)
    4. Fry the onions with the mixed herbs for 10 minutes until translucent.
    5. Prepare 1 pint of vegetable stock.
    6. Add the stock to the pan with the vegetables and bring to the boil.
    7. Turn the heat down and simmer for 20 minutes.
    8. Use a handblender to blend until the required consistency (I make mine smooth but you can leave chunks).

    If you want to make this more filling, you can add small pasta during the simmering stage. You can also alter the flavour by adding a tin of chopped tomatoes or some tomato puree. This soup is nice and thick and can be frozen in portions for taking to work.

    Ingredients:

    1/2 bag of frozen soya mince (I use supermarket own versions)
    1 onion, chopped
    1tbsp olive oil
    2 carrots, peeled and finely diced
    1 small tin of sweetcorn
    1/2 cup of frozen peas
    1/2 pint of vegetarian gravy (I use Bisto gravy granules)
    Mashed potato (enough to cover the dish you are using)

    1. Heat the oil in a frying pan.
    2. Add the onions and mince and fry for 10 minutes - make sure you stir it to prevent the mince burning.
    3. Add the carrots, peas, sweetcorn and gravy and mix.
    4. Tranfer the mix to an ovenproof dish.
    5. Top the mix with the mashed potato, running a fork over the top to get nice crispy bits when it cooks.
    6. Cook for 20 minutes on Gas Mark 6 or until the top is golden and it is bubbling.

    A cheat's version of this pie, is to fry off the veggie mince for 10 minutes, mix with a couple of tins of baked beans and then top with the mash and cook until the top is brown.
    Also, if you want it to have a shepherd's pie sort of feel to it, you could add a teaspoon of mint sauce to the gravy.

  • Well done! We're non-meaty people who still eat fish, but only a couple of times a week. At the moment we're rediscovering our love of Chilli whether in wraps, on baked spuds or just in a big bowl with tortilla chips and grated cheese on the side... Such a versatile dish and so filling and yummy. I make one from a Madhur Jaffrey book and I do spice it up a little more than she does!

    Thanks Mayflower. I do make a HM veggie chilli too, but when I'm working, Beanfeast is quicker, and my husband can cook it for me. ;) Would be great if you have the time to post your chilli recipe below though, as I'm heading out in a minute, so won't have time to post mine. Thanks.

    Ingredients:

    1/2 pack soya mince
    1 onion, finely chopped
    Garlic (if wanted - I don't use it very often)
    2 tsp dried Italian herbs
    1tbsp olive oil
    1tbsp tomato puree
    1 can chopped tomatoes
    1tsp brown sugar
    A splash of red wine vinegar
    Salt and pepper to taste
    1 handful of pasta per person (if serving with salad - add an extra handful if not)

    1. Heat the oil, then fry the onion in a large frying pan with the mixed herbs until the onion is translucent. If you are using garlic, add at this point.
    2. Add the soya mince, and cook for 10 minutes, stirring occasionally to prevent burning.
    3. Add the tomato puree, tomatoes, red wine vinegar and seasoning, along with half a can of water (using the tomato tin).
    4. Bring the bolognaise up to the boil, stir, and then turn it down to simmer for 10 minutes until the sauce has reduced and is rich and not too watery. (As soya mince doesn't have very much fat in it, it is inclined to burn, so stir every few minutes to stop this happening.)
    5. Cook the pasta according to the packet.
    6. Mix the bolognaise with the pasta, and serve. (You can add grated cheese or parmesan at this point, but it is actually just as nice on it's own if you are watching your waistlines.)

    The bolognaise sauce can be frozen in portions for use at a later point.

    Well I went shopping today for the ingredients for my meal plan, and I was surprised at how economical it was too. Granted I had some things in stock already (tomato puree, mixed herbs, potatoes and baked beans) but the rest came to about £20. I'm quite pleased with that, as my spending on going to the shops here and there was adding up.
