Does hotel have to prove what I owe?

Myself and a workmate have been staying in a holiday villa in a 5* hotel situated in Salalah, Oman. We have been here since January and have come up with a bit of a problem.
We have been here since January and charging some food and bar bills to our respective names at the villa. We had planned to pay our full bills at the end of the year due in one big hit each.
However when I got a printout of what is currently owed I noticed that a large amount has been charged under my name incorrectly. The reason I know this is because my friend has had his wife move out and there are a lot of meals ordered via room service (not cheap, around £60 each time) and I never use room service.
Most of the time when we have had drinks at the bar and put them onto the villa bill we have had to sign a receipt. Should the hotel have to produce these for what I have to pay or will they just go by the computer printout of all charges?
Should they prove what I have to pay or do I have to prove what I shouldn't pay?
If anyone has been in a similar situation it would be nice to hear their outcome.
