What sort of insurance do I need to deliver catalogue parcels for Hermes. In my own car.

Carriage of goods for hire and reward cover as the parcels do not belong to you. That is what you legally need to drive on the road.
You might also want Goods In transit insurance to cover loss of or damage to the parcels whilst in your custody or control. Don't know if Hermes insist on this but many parcel delivery firms do.
You might find more info on a specialist forum like http://www.parcelforum.co.uk/ where a lot of their people hang out.
Would be surprised if it was worth doing legally.0
